ISTITUTO TECNICO AGRARIO (ITA) of CIVIDALE has been the first Technical school for Agriculture in the Region Friuli Venezia Giulia. Founded in 1959 it was a further development of the already existing  technical school for agriculture (active since 1930) with the adjoining VET institute for agriculture (active since 1924).

In the early eighties the school carried out experimental initiatives (called “Corsi Cerere) by introducing pedagogical innovations in the curricula. In 1981 it was started the specialization course  in Viticulture and Enology, one of the nine courses activated throughout Italy. In the 2010/2011 school year the new secondary school reform placed the secondary technical schools for agriculture among the “technical schools” for “Agriculture and Food and Beverage Industry” .

In 2007 an olive oil mill was implemented, with the processing capacity of 500kg olives per hour, and able to separate the olive pit during the pressing. It is equipped with two independent grinders kg. 300, so there is the possibility to work simultaneously small batches of olives.

It has a special decanter separator (separating  olive pomace with the vegetation water from the oil), so that the waste may be disposed of and used as organic fertilizer in the soil. The mill of the ITA is based on modern continuous system, which can be summarized in the following sequence of processes: olives are introduced into the hopper to go in the hydropneumatic olive washing machine that guarantees total removal of soil attached to the olives as well as leaves and any other foreign body. Then  they are transported by a screw elevator and weight out in appropriate quantities, to the crusher, with a continuous run of the pomace to the kneading machine. The pomace mixed with water is sent to the centrifuge (decanter), which uses the principle of centrifugation at high speed, separating it into its three components: pomace, vegetable water and oil must. The oil and vegetation water are sent to centrifugal extractors to extract the oil.
